Mallows-Walnut Balls

Ingredients:

  • 500g. white chocolate
  • 1/2 cup butter
  • a cup of walnuts, chopped
  • 5 cups colored mini mallows
  • a cup of desiccated coconut
  • a cup of crushed cornflakes
  • chocolate syrup


Procedure:

  1. In a double boiler, melt the white chocolate with butter until smooth. Set aside to cool slightly
  2. In a bowl, combine walnuts and marshmallows. Pour in melted white chocolate and mix to completely coat the mallows and nuts w/ the chocolate.
  3. Shape into balls. Then, roll in desiccated coconut or crushed cornfakes.
  4. Put in paper cups. Chill until set. Drizzle lightly w/chocolate syrup before serving

Cheesy Sun Crisps

Ingredients:
  • 2 cups Cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup margarine, softened
  • 3 tbsps water
  • a cu of all purpose flour
  • a pinch of fine salt
  • 1 cup quick oatmeal
  • 2/3 cup roasted salted sunflower seeds

Procedure:
  1. Beat cheeses, margarine & water in a bowl until blended. Mix in flour & salt. Stir in oats and sunflower seeds until combined.
  2. Shape into a 12" long log. Wrap securely. Refrigerate for 4 hours or up to a week.
  3. Preheat oven to 400 Fahrenheit. Lightly grease cookie sheets. Set aside.
  4. Cut log into 1/8" thin slices. Flatten slightly. Place on cookie sheets. Bake for 8-10 minutes or until edges are light golden brown.
  5. Remove immediately and cool on wire rack.

Choco Cheese Cookie Bites

Ingredients:
>1/2 cup cream cheese, softened
>1 tbsp all purpose cream
>1 can (439g.) fruit cocotail, drained
>3 packs (137g each) chocolate cream filled cookies, reserve filling
>3 tbsps rainbow sprinkles


Procedure:
1. Mix cream cheese to soften, then add all purpose cream and cookie filling. Mix well.
2. Gently fold in fruit cocktail to the mixture. Chill for 30 minutes.
3. Top each cookie with a tablespoon of mixture. Cover with another cookie to make a sandwich.
4. Dredge cookie sides in rainbow sprinkles.
5. Arrange accordingly in a tray. Put inside the chiller for at least 30 minutes before serving.

Marbled Brownies Delight

Ingredients:
1-500g brownie mix box
1/2 cup chopped cashew nuts
1/3 cup chocolate morsels
1 bar cream cheese, melted

Procedure:
1. Preheat oven to 350Faahrenheit. Grease line a 9" square pan.
2. Prepare brownie mix according to package
directions. Fold in cashew nuts and chocolate morsels.
3. Spread butter on the prepared pan. Drop spoonfuls of melted cream cheese on top of the batter. Gently swirl with a fork or spatula to create a marbled effect. Do not over stir.
4. Bake in the preheated oven until done. Cool then cut into squares.

Queenie's Peanut Butter Cookies

Ingredients:
>2/3 cup all purpose flour
>1 tsp baking powder
>1/2 cup peanut butter
>1 cup brown sugar
>4 tbsps butter or shortening
>1 tsp vanilla extract
>1/4 tsp salt
>2 pcs eggs
>1 cup salted peanut, chopped


Procedure:

1. Preheat oven to 350 degrees Fahrenheit.

2. Brush oil unto a small shallow baking pan.

3. In a mixing bowl, mix the peanut butter and butter. Add the brown sugar, vanilla and

eggs. Beat until light and fluffy.

4. Combine the flour, baking powder and salt in a separate bowl. Add to the butter mixture

and mix until well-blended. Stir in the peanuts.

5. Spread a thin layer of batter (1/2" thick) evenly unto the pan and bake for 15-25

minutes or until a toothpick comes out clean when pricked. Allow to cool for 10 minutes

before cutting.

6. Serve.

Queenie's Fritter Batter

Ingredients:
>1-1/4 cup all purpose flour
>2 tbsps baking powder
>2 tbsps sugar
>1 tsp salt
>1 pc egg
>1 tbsp melted butter
>1/2 cup milk
>5 pcs apples
>1/4 cup calamansi juice
>a cup of water
>oil for deep frying


Procedure:

1. Combine in a small bowl the calamnsi juice and water. Set aside.

2. In a large bowl, combine the first-seven ingredients, to make a thick batter. Cover. set

aside inside the refrigerator.

3. Dice the apples and immediately soak in calamansi-water solution. Drain the apples. Pat

dry.

4. Add diced apples in batter.

5. Heat oil. Deep fry by a spoonful of batter until rich golden brown. Drain in paper

towels.

5. Serve as a snack.

Fruity Pineapple-Coconut Macaroons

Ingredients:
>500 grams canned pineapple crushed
>a cup of white sugar
>3 cups dessicated coconut
>3 egg whites
>1/2 tsp of vanilla extract


Procedure:

1. Pre-heat oven at 350 degrees Fahrenheit.

2. Combine first-two ingredients in a sauce pan including the syrup. Stir constantly until

liquid has evaporated and sugar starts to caramelize.

3. Transfer to a mixing bowl. Add the dessicated coconut, mix.

4. Add the eggwhites & vanilla extract. Combine well.

5. Lightly grease a baking sheet. Drop by tablespoons, an inch apart. Bake for 13-15

minutes. Cool on wire racks.

Pinoy-style Pork Siomai

Ingredients:
>1/2 kilo ground pork, ground twice
>1/2 cup grated singkamas
>1 tbsp spring onion
>1/2 tsp salt
>1 pc raw egg
>2 tbsps soy sauce
>2tbsps cornstarch
>1 tsp sugar
>30-40 pcs siomai wrapper


Procedure:
1. Mix all ingredients together. Wrap by spoonfuls in wrappers.

2. Brush steamer platw with oil. Arrange the pieces at least 1" apart, so that they will not stick together when cooked.

3. Boil water in steamer before placing the steamer plate. Steam for 30-45 minutes.

4. Serve with chili-garlic, soy sauce and calamansi

Suman Cassava

Ingredients:
>3 cups cassava, finely grated
>1 cup matured coconut, grated
>1 cup white sugar
>15 pcs banana leaves, washed & blanched


Procedure:
1. Combine grated cassava, grated coconut and sugar.

2. Place equal amounts of cassava mixture on banana leaves.

3. Roll leaf, enclosing the filling and fold both ends. Loosely tie the suman in pairs. Keep them in shape.

4. Arrange on steamer rack in staggered pile. Steam for 30 minutes, counting time when steam starts to form. Keep the steamer well-supplied with water to prevent drying out. Serve hot or cold.

Suman sa Ibus

Ingredients:
>3 cups glutinous rice
>2 tsps salt
>2 cups coconut cream


Procedure:
1. Soak glutinous rice in water for an hour or until the grains are swollen. Drain well. Add salt and coconut cream. Mix well. Prepare ibus, then fill with rice mixture. Seal tubes and tie with strips of the ibus.

2. Arrange the suman in a big saucepan and cover with water. Cover the pot and boil for 2 hours or so or until thoroughly cooked.

3. Serve with sugar or ripe mango.

Pichi-Pichi

Ingredients:
>2 cups cassava, finely grated
>2 cups white sugar
>2 cups pandan water
>1 pc matured coconut, grated


Procedure:

1. Boil water and twisted pandan leaves. Lower heat and allow to simmer for 20 minutes to get 2 cups of pandan water. Or just simply, sprinkle a drop or two of pandan essence in 2 cups of water.

2. In a bowl, mix cassava, sugar and pandan water.

3. Pour into individual cups or molds of your choice.

4. Steam for 45 minutes. Let cool, then sprinkle with grated coconut. Serve.

Classic Shortcakes

Ingredients:

>3/4 cup all-purpose flour
>1/4 cup cornstarch
>3 eggs
>a cup of sugar
>a tsp of vanilla extract
>2 tsps baking powder
>1/2 cup butter, melted


Procedure:

Preheat oven at 350 Fahrenheit. Whisk eggs until light and fluffy. Gradually whisk in sugar and vanilla. Sift dry ingredients together, then, gradually fold into egg mixture. Lastly, fold in melted butter.

Pour into paper-lined muffin pans, about 3/4 filled. Bake for 15 minutes or until golden brown. Serve warm.

Yields 15-18 pieces.

Bagnet (Ilocos Lechon Kawali)

Ingredients:

>2 kilos of pork liempo
>8 cups vinegar (sukang Iloco)
>salt and peppercorns, to taste
>oil for deep frying

Siding:

>shallots (lasuna or sibuyas Tagalog), chopped
>tomatoes, chopped
>bagoong isda


Procedure:

Marinate pork in vinegar, peppercorns and salt for 24 hours. Boil pork in its own marinade until pork is tender.

Hang it for about 4-6 hours to drain off oil or fat. Heat oil in a pan and deep-fry pork until golden brown.

To serve; slice pork and arrance in a platter. Serve with siding and hot steaming rice.

Classic French Toast

Ingredients:

>1 pc egg
>1/4 cup milk
>dash of vanilla extract
>a pinch of nutmeg
>1 tbsp butter or margarine
>2 pcs bread


Procedure:

Crack the egg into a medium-sized bowl and beat well. Then, mix in the milk, vanilla extract and nutmeg.

Put the butter in a frying pan. Heat the pan on the stovetop on medium heat. It's hot enough when the margarine starts to bubble.

Dunk each piece of bread in the egg mixture. Make sure the bread is totally coated but not soaked.

Cook the bread in the frying pan on low heat until the underside is light brown, that is about 4-5 minutes.

Use a spatula to flip the bread over. Cook the other side. Put a platter. Serve at once.

Chicken Empanada

Ingredients for filling:

>2 cups chicken meat
>1 pc onion, chopped
>2 cups cooked potatoes, diced
>1 pc green bell pepper, diced
>1/4 cup evaporated milk
>1/2 tbsp ground pepper
>salt to taste


Procedure:

Saute onion, then add all ingredients except for evaporated milk. Cook for % minutes, add milk, then cook for another 3 minutes. Cool Then, fill in dough.


Ingredients for crust:

>2 cups all-purpose flour (unsifted)
>a tsp of fine salt
>6 tbsps water
>2/3 cup butter or margarine
>2 tbsps sugar


Procedure:

Mix sugar, salt and flour. Cut in butter using a blender or 2 knives until it resembles a coarse cornmeal.

Sprinkle water and mix well w/hand to form ball. Knead lightly. Sprinkle flour on a board and roll out dough into 1/4"thick.

Cut using a round cutter. A medium-sized saucerncan also be used if there is n o molder. Just place saucer upside down on dough and cut with a knife.

Fill each cut dough with 2 tablespoons of sauteed filling. Fold dough to form a half-moon, then, press one end to the other. Brush with eggyolk or milk.

Arrange on a greased baking sheet.

Bake in pre-heated oven, 350 Fahrenheit, until crust is golden. Serve hot.

Chewy Almond Fudge

Ingredients:
  • 200 grams semi-sweet baking chocolate, chopped
  • 2/3 cup condensed milk
  • 1 tsp vanilla essence
  • 1 cup almonds, roasted & chopped

Procedure:
  1. Melt chocolate on top of a double boiler. Add in the condensed milk and vanilla.
  2. Beat until smooth, then, remove from fire. Stir in nuts and pour into a greased 9" square pan. Cool. Chill until set. Cut into squares.

Ginger Pork Balls

Ingredients:
  • 1/2 kg. lean ground pork
  • 1 cup coasely chopped water chestnuts or singkamas
  • 1/4 cup finely grated young ginger
  • 1 egg
  • 1 tsp fine salt
  • cornstarch for dusting
  • cooking oil for deep frying

Procedure:
  1. Mix lightly all the ingredients except for the last two. Form into an inch balls. Dust lightly with cornstarch. Deep fry until golden brown. Serve hot on toothpicks.

Lumpiang Shanghai

Ingredients:
  • 500 grams lean ground pork
  • 500 grams shrimps, remove heads, covering and tails
  • 4 tbsps soy sauce
  • 250 grams onion, finely minced
  • 1 tsp monosodium glutamate
  • 1/2 tsp fine salt
  • 50 pcs lumpia wrapper/spring roll wrapper
  • cooking oil for deep frying

Procedure:
  1. Except for the wrapper and oil, mix all ingredients in a glass or stainless bowl. Cling wrap. Sit in the refrigerator for at least an hour.
  2. Take a heaping tablespoon of the mixture and roll in lumpia wrapper. Making a long roll about 3/4 inch dameter. Cut into 3 parts. Deep fry in medium-low fire until golden brown. Drain in lots of paper towels.
  3. Serve hot with ketchup or sweet and sour sauce.

Chocolate Caramel Fudge

Ingredients:
  • 1-1/2 cup of sugar
  • 1/2 cup firmly packed brown sugar
  • 90 grams dark chocolate
  • 2 tbsp golden syrup
  • 1/2 cup heavy cream
  • 1/4 cup fresh milk
  • 1/4 cup butter

yield: about 40 pieces.


Procedure:
  1. Butter an 8" baking pan.
  2. Place the sugar, brown sugar, chocolate, corn syrup, cream and milk in a large heavy-based saucepan over low heat. stir until sugar has completely dissolved, taking care not to let the mixture boil. When the sugar has completely melted, bring to a boil and simmer for 10 minutes over low heat.
  3. Remove from heat and add the butter. Do not stir the mixture at this stage. Let cool for 20 minutes.
  4. Stir with a wooden spoon until very thick, about 10 minutes.
  5. Pour into prepared pan. Cover with parchment paper and let cool for 3 hours.
  6. Turn unto a chopping board. Cut into small squares.

Marble Chocolate

Ingredients:
  • 350 grams white chocolate
  • 1/2 cup butter
  • 400 grams bittersweet chocolate

yield: about 40 pieces


Procedure:
  1. Line an 8 x 10" baking pan with waxed paper.
  2. Melt the white chocolate in a double boiler over barely simmering water. Add butter and mix until smooth and glossy. remove from heat.
  3. Melt the bittersweet chocolate in a double boiler over barely simmering water.
  4. Place alternate spoonfuls of the white and bittersweet chocolate in the prepared pan. Swirl together the two together to make a marbled effect.
  5. Let the chocolate cool at room temperature until set, about 2 hours.
  6. Cut into small squares & serve.
