Bagnet (Ilocos Lechon Kawali)

Ingredients:
>2 kilos of pork liempo
>8 cups vinegar (sukang Iloco)
>salt and peppercorns, to taste
>oil for deep frying
Siding:
>shallots (lasuna or sibuyas Tagalog), chopped
>tomatoes, chopped
>bagoong isda
Procedure:
Marinate pork in vinegar, peppercorns and salt for 24 hours. Boil pork in its own marinade until pork is tender.
Hang it for about 4-6 hours to drain off oil or fat. Heat oil in a pan and deep-fry pork until golden brown.
To serve; slice pork and arrance in a platter. Serve with siding and hot steaming rice.
