Suman Cassava

>3 cups cassava, finely grated
>1 cup matured coconut, grated
>1 cup white sugar
>15 pcs banana leaves, washed & blanched

1. Combine grated cassava, grated coconut and sugar.

2. Place equal amounts of cassava mixture on banana leaves.

3. Roll leaf, enclosing the filling and fold both ends. Loosely tie the suman in pairs. Keep them in shape.

4. Arrange on steamer rack in staggered pile. Steam for 30 minutes, counting time when steam starts to form. Keep the steamer well-supplied with water to prevent drying out. Serve hot or cold.
