Ingredients:
- 4 slices bacon, cut up
- 3 c. potatoes, peeled & cubed
- 1 c. celery, chopped
- 1 c. carrots, chopped (fine)
- 3 c. chicken broth, divided
- 3 c. cream-style corn
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 3 c. milk
- Parsley, chopped
- 1/2 c. onion, chopped
- 2 tbsp. flour
- 1 tbsp. cornstarch
- 1/8 c. cooking oil
Procedure
Cook bacon in a Dutch oven until crisp; drain and set aside. Cook onion in bacon drippings and oil until tender. Add potatoes, 2 cups chicken broth, carrots, salt and pepper and bring to a boil. Reduce heat and add cream corn and celery. Cover and simmer for 20 minutes until tender. In a bowl, combine 1 cup chicken broth, flour and cornstarch; add to pot and cook until thickened. Stir in milk. Heat but do not boil. In serving bowls top with bacon and parsley. Serves 8 to 10.

Ingredients:
- 1 c. sharp cheese, shredded
- 2 tsp. onions, chopped
- 3 tbsp. mayonnaise
- Pinch of garlic powder
- 1 can firm potato chips, (Pringles have a rippled style that is firm)
Procedure
Combine all ingredients except the chips. Top each chip with 1 teaspoon of mix. Microwave until cheese melts, about 1 minute, 10 seconds at 60% power. Ingredients can be made ahead of time to incur little prep time when serving.

Ingredients:
- 1 pt. (or less) raw oysters
- 1 pkg. Knorr's Hollandaise sauce (follow directions)
- 2 (10 oz.) pkgs. frozen chopped spinach
- 1/2 c. Cheddar cheese, shredded
- 1/2 c. Mozzarella cheese, shredded
- 1/2 c. whipping cream or half & half
- 1/2 lemon
- Lemon pepper
- Salt & pepper or your favorite seafood seasoning
- Cracker or bread crumbs
- Paprika
Procedure
Cook spinach in a little water, just a short time, so it stays green. Drain, add the cream. Thicken with flour. Place small layer in buttered 1 1/2 quart casserole. Rinse (slightly) oysters, drain and put in casserole. Sprinkle juice of 1/2 lemon over them. Add seasonings.
Cover the oysters with remaining spinach. Add hollandaise sauce, the two cheeses, cracker crumbs and paprika. Bake at 375 degree for 15 minutes. Broil a few minutes. Serve and enjoy. Serves 6.

Ingredients:
- 1/4 c. unsalted butter
- 2 lbs. button mushrooms, halved vertically
- 1/2 c. dry white wine
- 1 tbsp. fresh lemon juice
- 1/8 tsp. ground nutmeg
- 1 c. whipping cream
- Chopped fresh parsley (optional)
Procedure
Melt 1/4 cup butter in heavy large skillet over high heat. Add mushrooms and saute until brown and beginning to release juices, about 10 minutes. Add 1/2 cup wine, 1 tablespoon lemon juice, and 1/8 teaspoon nutmeg. Boil until slightly reduced, stirring occasionally, about 5 minutes. Add 1 cup cream and boil until sauce thickens and coats mushrooms, about 10 minutes. Season with salt and pepper. Transfer mushrooms to bowl. Garnish with parsley and serve. Serves 6.

Ingredients:
- Vegetable cooking spray
- 1 tsp. vegetable oil
- 1 c. chopped onion
- 3/4 c. chopped green pepper
- 3 med. tomatoes, peeled and quartered
- 2 c. sliced fresh okra
- 1/4 tsp. salt
- 1/4 tsp. pepper
Procedure
Coat a large skillet with cooking spray; add oil. Saute onion and pepper until tender. Add remaining ingredients; cover. Cook 5 minutes, stirring occasionally. Yield: 7 servings.

Ingredients:
- 1/2 clove garlic
- 1/2 tsp. salt
- 1 (9 oz.) pkg. frozen French fries
- 1/2 tsp. pepper
- 3 tbsp. margarine
- 1 tbsp. flour
- 1/2 c. milk
- 1/4 tsp. onion salt
- 1/2 c. grated Swiss cheese
Procedure
Rub 9x13 glass dish with garlic. Sprinkle salt on bottom of dish. Put 1/2 package French fries in dish. Combine margarine, flour, cheese and seasonings. Heat milk and pour into cheese mixture. Pour one-half cheese mixture over potatoes. Repeat with remaining sauce and potatoes. Bake in 350 degree oven for 30 minutes.

Ingredients:
- 4 lg. chicken breasts, boned, skinned, halved lengthwise
- 2 tbsp. snipped parsley
- 1/4 lb. stick butter cut into 8 cubes
- 1/4 lb. Velveeta cut into 8 cubes
- 1 c. cornmeal
- 1 beaten egg
- 1 c. flour
- Oil
Procedure
Place chicken breasts, boned side up, between 2 pieces plastic wrap. Pound from center out to form cutlets not quite 1/4-inch thick. Peel off wrap. Sprinkle with salt. Sprinkle 2 tablespoons parsley over cutlets. Place cube of butter and cheese at end of end of each cutlet. Roll meat as for jelly roll.
Use toothpicks if needed; tuck in sides. Press seams well. Coat each roll with flour and dip in mixture of 1 beaten egg and 1 tablespoon water. Then roll in cornmeal. Chill thoroughly at least 1 hour. Fry chicken breasts in hot oil, 375 degrees, about 5 minutes until golden brown. Serves 4-8.

Ingredients:
- 5 eggs, separated
- 2 c. sugar
- 1 stick butter
- 1/2 c. Crisco
- 18 oz. pkg. coconut
- 2 c. flour
- 1 c. buttermilk (put 1 tsp. vinegar to 1 c. milk with 1 tsp. soda added)
Procedure
Preheat oven to 350 degrees. Mix egg yolks; add all remaining ingredients except coconut. Beat until smooth. Beat egg whites until stiff, not dry. Fold into batter. Stir in coconut. Pour into 3 (9 inch) pans. Bake 25 minutes.
Icing:
- 18 oz. pkg. cream cheese
- 1 stick butter
- 1 box powdered sugar
- 1 tsp. vanilla
Spread on cake and sprinkle coconut on between layers.

Ingredients:
- 2 c. packed brown sugar
- 1 c. butter, softened
- 2 eggs
- 1 tsp. vanilla
- 2 1/2 c. Gold Medal flour (all purpose)
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3 c. quick oats
- 1 (12 oz.) pkg. Nestle's semi-sweet chocolate morsels
- 1 can sweetened condensed milk
- 2 tbsp. butter
- 1 c. chopped nuts
- 1 tsp. vanilla
- 1/2 tsp. salt
Procedure
Heat oven to 350 degrees. Grease jelly roll pan 15 1/2 x 10 1/2 x 1-inch. Mix brown sugar, 1 cup butter, the eggs and 1 teaspoon vanilla in large bowl. Stir in flour, baking soda, and 1/2 teaspoon salt. Stir in oats. Reserve 1/3 of the mixture.
Press remaining oatmeal mixture in pan. Heat chocolate morsels, milk and 2 tablespoons butter in 2-quart saucepan over low heat, stirring constantly, until chocolate morsels are melted. Remove from heat, stir in nuts, 1 teaspoon vanilla and 1/2 teaspoon salt. Spread over oatmeal mixture in pan.
Drop reserved oatmeal mixture by teaspoonful onto chocolate mixture. Bake until golden brown, 25-30 minutes. While warm, cut into squares. *You can also add 1/2 cup peanut butter to oatmeal mixture.

Ingredients:
- 1 (18 1/2 oz.) pkg. yellow cake mix
- 1 (3 3/4 oz.) pkg. instant vanilla pudding mix
- 1 (15 oz.) can Coco Lopez cream of coconut
- 1/2 c. plus 2 tbsp. rum (Bacali White)
- 1/3 c. vegetable oil
- 4 eggs
- 1 (8 oz.) can crushed pineapple, well drained
Procedure
Preheat oven to 350 degrees. In large mixer bowl, combine cake mix, pudding mix, 1/2 cup rum, oil, eggs, and 1/2 cup cream of coconut. Beat on medium speed 2 minutes. Stir in pineapple. Bake in 10-inch tube pan for 50-55 minutes. Cool slightly. Remove from pan.
With a table knife or skewer, poke holes about 1 inch apart in cake from top to almost the bottom. Combine remaining cream of coconut and rum. Pour over cake. Chill thoroughly. Garnish with whip cream, pineapple chunks, cherries and toasted coconut if desired.

Ingredients:
- 1 (9 inch) pie shell, uncooked in deep pie pan
- Fresh sliced (very ripe) peaches
- 1 1/2 c. sugar
- 3 eggs
- 1 tsp. vanilla
- 1 cube butter
Procedure
Sift together 1 1/2 cups of sugar, 3 tablespoons flour. Beat 3 eggs well; add dry ingredients and 1 teaspoon of vanilla. Slice 1 cube of butter over peaches and pour mixture over peaches. Bake at 450 degrees for 10 minutes and 350 degrees for 1 hour.

Ingredients:
- 1 c. brown sugar
- 1 c. hot water
Cook a few minutes to make a syrup.
Pastry:
- 1 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 tbsp. shortening
- 1/3 c. milk
- 2 apples, peeled and sliced thin
Procedure
Mix flour, baking powder, and salt. Cut in shortening until mixture becomes mealy in appearance. Add milk and stir to make a soft dough. Roll the pastry on a piece of waxed paper sprinkled with flour. Roll into a rectangle about 9x15 inches. Sprinkle the pastry with white sugar and cinnamon. Spread the sliced apples on top.
Roll up, using the wax paper to help handle as the dough is very tender. Slice into 1-inch slices. Put the cut side down in an 8-inch square baking dish (makes 3 rolls in each direction). Dot with butter and pour syrup over. Bake in 350 degree oven for 30-40 minutes or until brown on top. Serve with whipped cream.

Ingredients:
- 1 head cabbage, shred very thin
- 1 med. white onion, chopped
- Salt
- Pepper
- 1 can tiny shrimp (rinse and drain)
- Kraft mayonnaise
Procedure
Shred cabbage thin. Add chopped onion, salt and pepper to taste shrimp. Toss with fork. Cover and chill 1 hour. Add 3 tablespoons mayonnaise; toss with fork. Cover and chill 3 hours before serving.

- 4 tbsp. butter
- 1/4 c. water

Mix onion, mushrooms and zucchini. Add water; cover. Microwave 8-10 minutes on HIGH. Stir. Cook 5-7 additional minutes. Drain and add butter and seasonings. Serve. Serves 6-8.

Ingredients:
- 1/4 c. butter or margarine
- 3 lg. baking potatoes, peeled
- Salt and pepper
- 2 tbsp. grated Parmesan cheese, or more
Procedure
Preheat oven to 475 degrees. Melt butter in small pan or in the microwave. Halve potatoes lengthwise, then slice crosswise into 1/8-inch-thick slices (they will be half-moon shape). Do not put potatoes in water after slicing. Immediately line up in buttered 13x9-inch baking pan with slices overlapping.
Pour melted butter over potatoes. Season with salt and pepper. Bake 20 minutes. Remove from oven; sprinkle with Parmesan cheese. Bake an additional 5-7 minutes or until cheese is melted and slightly browned.

Ingredients:
- 3/4 c. mayonnaise
- 1/3 c. flour
- 2 tbsp. chopped onion
- 1 tsp. garlic salt
- 2 1/4 c. milk
- 1 c. shredded Swiss cheese

- 10 oz. pkg. chopped broccoli, thawed and drained
- 1 1/2 c. sliced almonds
- 4 oz. can mushrooms, drained

Procedure
Combine mayonnaise, flour and seasonings. Gradually add milk; cook over low heat, stirring constantly until thickened. Add cheese and wine; stir until cheese is melted. In large bowl combine mayonnaise and pimiento; toss lightly. Pour mixture into 11 3/4 x 7 1/2-inch baking dish. Top with remaining nuts. Bake at 350 degrees for 40-45 minutes or until thoroughly heated. Serve with grated Parmesan cheese if desired. Yield: 6-8 servings.

Ingredients:
- 1 sm. onion, chopped
- 1 (4 lb.) beef roast
- 2 cans mushroom soup
- 6-8 med. potatoes
- 6-8 carrots
- Salt and pepper
Procedure
Put roast in Dutch oven and the 2 cans of mushroom soup plus 2 soup cans water. (I use milk sometimes.) Bake at 325 degrees for around 3 hours, then add potatoes and carrots and bake for 45 minutes to 1 hour longer.

- 1/4 c. Crisco
- 1/2 c. chopped onion
- 1/4 c. flour
- 1 tsp. salt
- 2 c. milk
- 1 tbsp. prepared mustard
- 1/4 lb. (1 c.) shredded American cheese
- 5 or 6 wieners (1/2 lb.)
- 3 c. sliced potatoes
Procedure
Melt Crisco; add onions and cook until tender. Stir in flour and salt. Add milk and cook over low heat, stirring constantly, until thickened and beginning to boil. Remove from heat. Stir in mustard and cheese. Cut wieners in 1/4 slices. Arrange alternate layers of potatoes, wieners, and cheese sauce in 2-quart casserole which has been rubbed with Crisco. Top with cheese sauce. Ingredients:
- 2 tbsp. butter or margarine
- 4 chicken breast halves, skinned
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 c. sliced mushrooms
- 1 (1.3 oz.) pkg. golden onion soup mix or (1.25 oz.) pkg. onion soup mix
- 1 1/4 c. water
- 1/4 c. white wine
- Worcestershire sauce
- 1 tbsp. cornstarch
- 3 tbsp. water
Procedure
Melt the butter in a large skillet. Add chicken and brown on both sides. Remove chicken from skillet, reserving drippings in skillet. Add chopped onion, green pepper and mushrooms to skillet; saute until crisp-tender. Return chicken to skillet. Combine soup mix, 1 1/4 cups water and Worcestershire sauce in a small bowl.
Pour over chicken. Cover, reduce heat and simmer 20 minutes or until chicken is tender. Remove chicken to a serving platter. Combine cornstarch and 3 tablespoons water; add to sauce. Return to boil; boil 1 minute. Serve sauce over chicken.

- 1 diced onion
- 2 cans pork-n-beans
- 2 cans butter beans
- 2 cans red kidney beans
- 1/2 tsp. dry mustard
- 1/2 c. catsup
- 1/2 c. brown sugar
Procedure
Cut bacon into small pieces and fry until brown (not crisp). Add to beans and pour into large pot. Fry ground round and onion together and add to beans. Simmer for 10 minutes.

Ingredients:
- 1 3/4 c. water
- 1 1/2 c. Minute Rice
- 4 slices bacon
- 2 beaten eggs
- 2 tbsp. water
- 1/4 c. sliced green onion with tops
- 3 tbsp. soy sauce
- 4 pork rib chops
- Soy sauce
Procedure
In saucepan bring 1 3/4 cups water to boiling. Remove from heat; stir in rice. Cover; set aside. In skillet cook bacon until crisp. Remove bacon and crumble, reserving 2 tablespoons drippings. Set aside. In bowl combine eggs and the 2 tablespoons water. In skillet cook eggs in 1 tablespoon of the reserved drippings until set, stirring occasionally. Cut eggs in narrow strips. Add rice, bacon, onion and the 3 tablespoons soy sauce to eggs; mix well.
Turn into a greased 1 1/2-quart casserole. In skillet brown chops on both sides in remaining 1 tablespoon drippings. Arrange chops atop rice mixture; brush with additional soy sauce. Bake, covered, at 350 degrees until chops are tender, about 40 minutes. Makes 4 servings.

Ingredients:
- 1 sm. chopped onion
- 1 sm. can chopped green chilies
- 1/2 c. Carnation or Pet milk
- 1 can cream of mushroom soup
- 1 (8 oz.) box Velveeta cheese
- 2 c. boned chicken or turkey
- Grated Colby or Cheddar cheese
- Doritos
Procedure
Mix first 5 ingredients together and heat until the cheese melts. Add the boned chicken or turkey. Stir and set aside. Line a casserole dish (9x11-inches) with Doritos on the bottom and along the side. Pour the mixture on top. Generously add the grated cheese on top. Bake at 325 degrees for 20-30 minutes.

Ingredients:
- 1 c. rice, white or wild
- 1 lg. onion, chopped
- 1 c. chopped celery
- 4 tbsp. oleo
- 2 lb. ground beef
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can water chestnuts, sliced
- 1 med. can mushrooms
- 1 tbsp. Worcestershire sauce
- 2 tbsp. soy sauce
Procedure
Cook rice; saute ground beef and drain. Saute onions and celery in oleo. Mix rice, meat, onions and celery together with remaining ingredients. Put in baking dish. Bake at 350 degrees for 1 hour. Serves 12 people. Freezes real well.

Ingredients:
- 1 lb. ground beef
- 1 sm. onion, chopped
- 1/2 c. catsup
- 1 tsp. mustard
- 1/4 c. brown sugar, packed
- 1 (16 oz.) can pork & beans
- 1/4 c. water
Procedure
Brown ground beef and drain well. Add onion, cook until they are tender, not brown. Remove from heat. Stir in remaining ingredients. Pour into casserole and bake at 400 degrees for 30 minutes. This reheats well. Serves 6.
