Causa Rellena De Atun

Ingredients for the Causa:
  • 8 pcs large potatoes, boiled and mashed
  • 1/2 cup light olive oil
  • 3 tbsp lemon juice
  • 1 tsp hot yellow peppers, if available 
  • salt and pepper
Ingredients for the tuna and avocado filling:
  • 2 cans tuna, drained well
  • 1 cup good quality mayonnaise
  • 1 pc small onion, chopped fine
  • 1 pc avocado, peeled and sliced
  • 3 pcs hardboiled eggs, sliced
  • 1 bunch parsley, chopped
  1. Mix mashed potatoes with the olive oil and lemon juice. Add peppers as desired, and season with salt and pepper to taste. Divide in half.
  2. Cover the bottom of a serving dish wit half of the potatoes.
  3. Combine tuna, mayonnaise, onion, and season with salt and pepper. Spread over potato layer.
  4. Arrange avocado slices over the tuna. Cover with  a thin layer of mayonnaise and the hardboiled egg slices.
  5. Top the rest of the potatoes. Sprinkle with chopped parsley and chill for 2 hours before serving. Serve with Salsa Criolla on the side. Makes 8 servings.
For the Salsa Criolla:
  • 2 pcs medium onions, sliced thin
  • 1/2 tsp salt
  • 1 1/2 tsp lemon juice
  • 2 tbsp salad oil
  • 1 tbsp parsley, chopped fine chili flakes
  1. In a bowl, combine sliced onions, salt and cold water to cover. Let stand around 15 minutes and drain.
  2. Toss with the rest of the ingredients. Prepare at least an hour before serving to allow flavors to blend.
  3. Serve with the Causa; also great with salads and inside sandwiches.
