Chocolate Mousse

Ingredients:
  • 6 ounces bittersweet or semisweet chocolate, coarsely chopped 
  • 4 tablespoons unsalted butter 
  • pinch of salt
  • 1 teaspoon vanilla extract 
  • 1 1/2 tablespoons rum
  • 4 large eggs, separated
  • 2 tablespoons sugar 
  • 1/2 cup heavy cream 
  • whipped cream for garnish
Procedure

1. Melt chocolate over hot water using a double boiler. Remove from heat then add butter.
Stir until butter has melted completely. Then add salt, vanilla extract, and rum. Mix well. Add egg yolks one at a time, mixing well after each addition.

2. In another bowl, beat the egg whites until soft peaks form. Add sugar and beat until egg whites become stiff but still moist. Do not overbeat. Fold egg whites into the chocolate mixture.

3. Whip heavy cream to soft peaks. Fold it into the chocolate mixture. Spoon into desert glasses or ramekins. Chill. Serve with a dollop of whipped cream.
