Banana Freeze

Ingredients:
>4 pcs lacatan bananas, mashed
>1-1/8 cup sugar
>1 tbsp orange juice
> 1 can whipping cream


Procedure:
1. Combine bananas, sugar, orange juice and whipping cream in a bowl.

2. Wisk until smooth. Freeze until set.

Cheesy Buko Langka Sherbet

Ingredients:
>a cup of young coconut meat, grated
>2 cups young coconut juice
>1 can (300ml) condensed milk
>a cup of candied Langka
>1/3 cup grated cheddar cheese


Procedure:
1. In a blender, combine all ingredients. Blend for several seconds until combined.

2. Pour into a freezing tray. Freeze until firm.

3. Serve.

Strawberry Smoothie

Ingredients:
>3/4 cup fresh strawberries
>1/4 cup plain yoghurt
>1/4 cup simple syrup
>1 tsp vanilla
>1 jigger liquor, vodka or rhum
>1 cup crushed ice
>sliced strawberry for topping


Procedure:
1. Put all the ingredients in a blender. Blend on slow for 25 seconds. Then, at medium-high speed for another 25 seconds or until smooth.

2. Pour in a tall glass. Top with sliced strawberry. Serve

Cheesy Pastillas Salad

Ingredients:
>3/4 cup all purpose cream, chilled
>6 tbsps condensed milk
>11 pcs pastillas de leche
>3 tbsps cheese sandwich spread
>3/4 can mandarin orange, syrup drained
>3/4 can fruit cocktail, syrup reserved
>3 pcs bananas, cut into rounds, marinated in fruit cocktail syrup
>1/3 cup rice crispies


Procedure:
1. In a blender or food processor, puree the pastillas and cheese spread until well combined. Set aside.

2. Whip the chilled cream until stiff peaks form and volume has doubled. Add in the pureed pastillas-cheese mixture and continue beating until well incorporated. Gently fold in the condensed milk

3. In a serving bowl, toss in fruits and the pastillas-cheese cream. Sprinkle rice crispies on top. Serve chilled.

Tropical Fruit Sorbet

Ingredients:
  • 1/2 tsp powdered gelatin
  • 2 tbsps water
  • 3/4 cup water
  • sugar to taste
  • 1/4 cup corn syrup
  • 1 cup of fruit puree of two mixed fruits of your choice, refrigerated overnight before use

Procedure:
  1. In a pan, dissolve gelatin in 2 tablespoons water on low heat.
  2. Add 3/4 cup water, sugar and corn syrup. Still on low heat, stir until sugar is fully dissolved. Transfer the sugar syrup to a deep bowl and cover with cling wrap. Refrigerate overnight.
  3. Place ice cream maker chamber in freezer, if needed.
  4. After overnight refrigeration, combine the gelatin-sugar syrup mixture and fruit puree.
  5. Prepare the ice cream maker then pour in the fruit mixture and churn until it reaches a sorbet-like consistency. Depending on the kind of ice cream maker you use, this should take 30 minutes to an hour.
  6. Pour the soft sorbet in a deep container and freeze until ready to serve.
