Sunny Citrus Float

 Ingredients:
  • 1/2 iced tea mix, lemon-flavored
  • 4 cups cold water
  • 1/3 cup frozen lemonade concentrate, thawed
  • 1/3 cup orange juice concentrate, chilled
  • vanilla ice cream

Procedure:
  1. Combine first-four ingredients in a large pitcher. Mix well.
  2.  To serve, fill glasses to 2/3 full w/ iced tea mixture. Top each glass w/ a scoop of vanilla ice cream.

Iced Coffee

Ingredients:
>1 tbsp ground coffee
>1-1/2 cup hot water
>2 tbsps condensed milk
>a cup of crushed ice


Procedure:

1. In a cup, mix together the first-two ingredients. Let it cool.

2. Pour coffee in a blender. Add condensed milk and crushed ice. Blend.

3. Serve immediately.

Brown Cow

Ingredients:
>1 scoop vanilla ice cream
>1 can root beer, chilled
>whipped cream, for garnish


Procedure:

1. Chill tall beer mug. Place an ice cream in mug. Pour in chilled root beer. Top with whipped cream.

2. Serve immediately.

Pineapple Gin "Kir"

Ingredients:
>3/4 cup pineapple juice
>1/2 cup gin
>1 pc lemon, juice extracted
>2 tsps creme de cassis


Procedure:
1. In a pitcher, mix pineapple juice, gin & lemon juice. Divide into highball glasses.

2. Pour a teaspoon of creme de cassis into the center of each glass. Do not stir.

3. Carefully fill glasses with ice.

4. Serve immediately.

Homemade Cassis

Ingredients:
>10 oz or 2 cups fresh black currants, stems removed
>a cup of white sugar
>2 cups of cognac or brandy


Procedure:

1. Using a potato masher, mash currants in a medium saucepan. Add sugar and a cup of water; bring to a simmer over medium-heat. Cook until sugar is dissolved and fruit has released all juices, stirring occasionally, about 5 minutes.

2. Remove pan from heat; stir in cognac or brandy. Transfer to a glass jar. Seal tightly. Refrigerate for a week.

3. Strain mixture to a sieve into a medium bowl. Pour again through sieve lined w/ cheesecloth into a clean jar

4. Refrigerate again for a week to develop flavors.

Papaya Non-Fat Smoothie

Ingredients:
>a good slice of papaya
>6 tbsps non-fat fresh milk
>a tbsp of simple sugar
>1-1/2 cups crushed ice


Procedure:

1. In a blender, put all ingredints. Blend until smooth.

2. Serve at once.

Strawberry Smoothie

Ingredients:
>3/4 cup fresh strawberries
>1/4 cup plain yoghurt
>1/4 cup simple syrup
>1 tsp vanilla
>1 jigger liquor, vodka or rhum
>1 cup crushed ice
>sliced strawberry for topping


Procedure:
1. Put all the ingredients in a blender. Blend on slow for 25 seconds. Then, at medium-high speed for another 25 seconds or until smooth.

2. Pour in a tall glass. Top with sliced strawberry. Serve
