Fish Escabeche

Ingredients:
>2 tbsps chopped onion
>1 tbsp chopped garlic
>a tbsp of cooking oil
>1-1/2 cups Tilapia fillet
>1/2 cup tomato sauce
>1/2 pc beef broth cube
>1/4 cup sliced green & red bell pepper
>1 brick all purpose cream
>2 tbsps black beans
>1/2 cup pineapple chunks
>flour for breading
>oil for deep frying
>salt and pepper to taste
Procedure:
1. Season fish with salt and pepper then bread with flour. Deep fry until golden then set aside.
2. Prepare sauce by sauteing onion and garlic in heated oil until translucent.
3. Mix in tomato sauce, beef broth cube, bell peppers, all purpose cream, black beans and pineapple chunks. Mix well. Season with salt and pepper.
3. Serve the deep fried fish fillet with the sauce.
