Pichi-Pichi

Ingredients:
>2 cups cassava, finely grated
>2 cups white sugar
>2 cups pandan water
>1 pc matured coconut, grated
Procedure:
1. Boil water and twisted pandan leaves. Lower heat and allow to simmer for 20 minutes to get 2 cups of pandan water. Or just simply, sprinkle a drop or two of pandan essence in 2 cups of water.
2. In a bowl, mix cassava, sugar and pandan water.
3. Pour into individual cups or molds of your choice.
4. Steam for 45 minutes. Let cool, then sprinkle with grated coconut. Serve.
