Jelly Roll with Butter Filling

The foam-type cake or cakes that are light and fluffy are of two kinds: the sponge cake and meringue. The jelly roll with butter filling belongs to the foam-type cake that follows 3 basic steps in its preparation, which are: 1) preparing the batter mixture, 2) preparing the meringue and 3) making the jelly roll. Let's try the recipe below.

Ingredients:
- 216 gm sugar
- 14 gm salt
- 141 gm cake flour
- 160 gm egg yolk
- 240 gm egg white
- 13 gm baking powder
- 5 gm vanilla
- cream of tartar
Materials/Utensils:
- rubber scrapper
- mixing bowl
- sheet pan
- wax paper
- cake tester
- piece of cacha cloth
- spatula
- 3-speed mixer
- oven
- Preheat oven to 375°F for 30 minutes.
- Beat egg yolk in electric mixer set at speed #3. Add vanilla and water. Continue mixing until thick. Switch off mixer.
- Combine salt and flour in a bowl. Fold the egg mixture into flour mixture gradually, gently cutting down to the bottom of bowl, scrapping off mixture sticking at the side of bowl every now and then, and then folding over the top of mixture with spatula until mixture becomes creamy.
- Transfer the mixture to another container. Set aside.
Preparing the Meringue
- Add cream of tartar to egg white in a mixing bowl. Beat with electric mixer set to speed #3.
- Gradually add sugar while mixing.
- Continue mixing until stiff peaks form and mixture does not slide anymore when bowl is tilted.
Making the Jelly Roll
- Fold meringue into batter mixture.
- Grease sheet pan with cooking oil. Line pan with wax paper.
- Pour cake batter mixture into the pan, making sure the batter is evenly distributed.
- Bake the mixture for 20 minutes (or until wooden pick inserted in center comes out clean).
- Prepare a piece of cacha cloth dusted lightly with sugar.
- Remove cake from the oven and place it on the cacha cloth sprinkled with sugar. Carefully remove the wax paper lining.
- Spread butter on top of the cake.
- Roll the cake to form a tube. Slice crosswise into desired thickness.
