Eggplant Adobo

Ingredients:
>5 cups eggplant, sliced diagonally
>1/3 cup vegetable oil
>1/3 cup soy sauce
>1/4 cup white vinegar
>6 cloves garlic, minced
>1/2 tsp black pepper
Procedure:
1. Spread eggplants on paper towel and sprinkle with salt. Let it stand for 30 minutes and rinse then, pat dry.
2. In a nonstick pan, fry eggplant in oil until brown. Drain in paper towels. Set aside.
3. In a small saucepan, simmer soy sauce, vinegar, garlic and pepper for 5 minutes. Add eggplant. Cover. Cook in low heat for 7 minutes.
4. Serve hot and with steamed rice.
