Velva's Meatballs Recipe

  • 1 c. brown sugar
  • 1 c. chopped onions
  • 1 (8 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 2 c. water
  • 2 c. uncooked long grain rice
  • 4 c. water

Simmer brown sugar and onions together in a Dutch oven or large pot until onions are soft. Add the tomato sauce, paste and water.

1 or 2 lbs. lean ground beef
1 or 2 eggs
1 or 2 c. seasoned bread crumbs
Salt, pepper & parsley to taste

Combine all ingredients in a large bowl and shape into small meatballs. Drop into sauce and simmer, uncovered, for 1 hour, stirring occasionally. Prepare rice in a large saucepan, according to package directions. Place individual servings of rice on each plate and cover with meatballs and sauce. A tossed salad completes the dinner. Preparation Time: 20 minutes. Cooking Time: 1 hour. Serves 4-8.
