  • 1/4 c. olive oil
  • 1 clove garlic, chopped finely
  • 1/4 c. vinegar, pickle juice, or lemon juice
  • 10-15 med. tomatoes, cut in sm. pieces
  • 10-15 olives, sliced
  • 2-3 pickles, cut up
  • Oregano, parsley, salt and pepper

Chop garlic and add it to the olive oil to marinate for a few minutes. Chop the tomatoes, olives and pickles and toss them in a bowl. Add more or less, tomatoes, olives and pickles to taste. Pour olive oil-garlic mix over the vegetables and toss again. Add your choice of vinegar, pickle juice, or lemon juice, again to taste.

Season with oregano, parsley, salt and pepper, to taste. Chill and serve over hot spaghetti. Don't forget the cheese! (You can add or substitute any veggies in this sauce - broccoli is always good).
