Tiramisu Parfait

For the espresso syrup
  • 1 cup freshly brewed hot espresso 
  • 1/3 cup coffee liqueur 
  • 1/4 cup granulated sugar 
  • 1/2 cup water
For the tiramisu filling
  • 4 large egg yolks 
  • 1/2 cup sugar 
  • 1/8 teaspoon salt 
  • 3 tablespoons rum
  • 1 pound (two 8 ounce bars) cream cheese
  • 3/4 cup heavy cream, chilled
For the parfait
  • 35 pieces ladyfingers
  • 3 ounces semisweet or bittersweet chocolate, grated
  • 2 tablespoons cocoa powder
Procedure

1. Make the espresso syrup: Combine all ingredients in a medium saucepan. Heat until sugar dissolves. Cool and set aside.

2.  Make the tiramisu filling: In a bowl of a standing mixer fitted with whisk attachment, combine egg yolks, sugar, and salt, and whisk until light and pale yellow. Add rum and beat until combined. Add cream cheese to egg yolk mixture. Continue beating until smooth.

3. In another bowl, whip heavy cream to stiff peaks. Fold it into the cream cheese mixture. Set aside.

4. Assemble the parfait: Spoon W2 tablespoons of the tiramisu filling evenly into each glass. Break the ladyfingers into halves or thirds then dip them into the espresso syrup until saturated. Place the soaked ladyfingers over the tiramisu filling then sprinkle 1 tablespoon of grated chocolate on top. Repeat the layering until you reach the rim of the glass. Top everything with a thin layer of the tiramisu filling and a sprinkling of sifted cocoa powder. Cover glasses with plastic wrap and chill. Before serving, sprinkle with grated chocolate.
