Causa Rellena De Atun

Ingredients for the Causa:
- 8 pcs large potatoes, boiled and mashed
- 1/2 cup light olive oil
- 3 tbsp lemon juice
- 1 tsp hot yellow peppers, if available
- salt and pepper
- 2 cans tuna, drained well
- 1 cup good quality mayonnaise
- 1 pc small onion, chopped fine
- 1 pc avocado, peeled and sliced
- 3 pcs hardboiled eggs, sliced
- 1 bunch parsley, chopped
- Mix mashed potatoes with the olive oil and lemon juice. Add peppers as desired, and season with salt and pepper to taste. Divide in half.
- Cover the bottom of a serving dish wit half of the potatoes.
- Combine tuna, mayonnaise, onion, and season with salt and pepper. Spread over potato layer.
- Arrange avocado slices over the tuna. Cover with a thin layer of mayonnaise and the hardboiled egg slices.
- Top the rest of the potatoes. Sprinkle with chopped parsley and chill for 2 hours before serving. Serve with Salsa Criolla on the side. Makes 8 servings.
- 2 pcs medium onions, sliced thin
- 1/2 tsp salt
- 1 1/2 tsp lemon juice
- 2 tbsp salad oil
- 1 tbsp parsley, chopped fine chili flakes
- In a bowl, combine sliced onions, salt and cold water to cover. Let stand around 15 minutes and drain.
- Toss with the rest of the ingredients. Prepare at least an hour before serving to allow flavors to blend.
- Serve with the Causa; also great with salads and inside sandwiches.
