Fruit and Ham Salad

Ingredients:
Salad Components:
200 gram romaine lettuce, end part removed
4 slice Purefoods Ham Selections, Sweetened, cubed
2 piece large ripe mango, sliced into strips
2 piece red apple, sliced into strips
½ cup red grapes, sliced thinly
2 piece kiwi, sliced into strips
1/8 cup toasted peanuts, coarsely chopped
Dressing:
½ cup balsamic vinegar
¼ cup maple syrup
1 tbsp muscovado sugar
1/8 cup Strawberry Jam
Procedure:
To make the dressing: In a small bowl combine balsamic vinegar, maple syrup, sugar, and jam. Mix well then transfer in a squeeze bottle. Set aside.
To make the salad, place the lettuce leaves on a chopping board, Add sweet ham, mangoes, apples, grapes and kiwis and roll lettuce. Place roulade in shot glasses for presentation if desired. Sprinkle roulade with nuts on top and drizzle with the dressing.
Makes 4 servings.
