Croque Monsieur

2 tbsps utterb
2 tbsps All Purpose Flour
1 cup Fresh Milk
1 cup Quickmelt Cheese, grated
1/8 tsp paprika
salt, to taste
2 pcs bologna ham
4 pcs white bread


In a small saucepan, melt butter. Add flour. Blend milk in stirring continuously to avoid lumps. Add of the grated cheese into the milk mixture and continue cooking over low heat until cheese is completely melted. Season with paprika and salt. Set aside.

Put the ham on two pieces of bread. Divide half of the remaining cheese between the two sandwiches. Top the sandwiches with another piece of bread. Transfer sandwiches into an oven proof dish. Pour sauce over the sandwiches then sprinkle remaining cheese over the sauce.

Bake in oven or oven toaster until cheese is melted and bubbly.

Makes two sandwiches.
