Cocktail Vegetables Recipe

Ingredients:

  • 1/2 lb. sm. fresh mushrooms
  • 1 c. olive oil
  • 2 cloves garlic
  • 1 3/4 c. vinegar
  • 1/3 c. sugar
  • 2 tbsp. prepared mustard
  • 1 tbsp. salt
  • 1 tsp. oregano
Directions:

Simmer first three ingredients. Blend remaining ingredients in a large bowl, add mushroom mixture. Marinate for 12 hours these uncooked fresh vegetables: cauliflowerettes, green pepper strips, celery slices, carrot flowers, tomato wedges, pickled onions, etc. (Also great for summer salad.) Serves 8 to 10.
