Pork Loin Adobo

Ingredients:
>a kilo of pork loin with skin, cut into 1-1/2" cubes
>1/2 cup soy sauce
>2 tbsps brown sugar
>1/4 cup white vinegar
>10 pcs whole peppercorns
>10 cloves garlic, crushed
>2 pcs red bell pepper, sliced
>1 bay leaf
>1-1/2 cup water
>4 pcs potato, peeled and quartered
Procedure:
Marinate the pork cubes in a mixture of soy sauce, sugar, vinegar, peppercorns, garlic and red bell peppers for 10 minutes.
Add bay leaf and water. Cover. Bring to boil without disturbing. Then, lower heat and simmer for 30 minutes. Add potatoes and simmer for another 5 minutes more.
Serve with hot steaming rice.
