Ingredients:
- 4 tablespoons light mayonnaise
- 1 teaspoon whole grain mustard
- 100-gram can tuna in water
- 1 celery stick, chopped
- half a Granny Smith apple, cored and chopped
- 1 tablespoon unsalted almonds or walnuts, chopped
- 2 slices whole-wheat bread
- a bunch of mesclun or baby spinach
- In a bowl, mix together light mayonnaise and mustard. Stir in tuna, celery, apple, and nuts.
- Place mesclun or baby spinach on each bread slice.
- Top with tuna mixture. Serve.
