Spinach and Mrawberry balad with Poppyseed Dressing

Most people think that vinaigrette is the healthier option. Be careful though, it can contain up to 70-percent fat! The yogurt-based dressing in this salad makes it light and figure-friendly. The strawberry-spinach combo maximizes iron and vitamin C absorption too.

For the dressing:
  • 1/2 cup nonfat plain yogurt 
  • 1/4 cup orange juice concentrate or juice from 2 oranges 
  • 2 tablespoons poppyseeds 
  • 1 tablespoon honey (optional) 
  • salt and pepper to taste

For the salad:
  •  12 cups spinach leaves, washed 
  •  24 strawberries, halved
Procedure
  1.  Make the dressing: In a small bowl, whisk together yogurt, orange juice, poppyseeds, and honey. Season with salt and pepper. Set aside.
  2.  Prepare the salad: Place spinach leaves in a bowl. Top with strawberries.
  3.  Toss or drizzle with 12 tablespoons dressing before serving.
