For the dressing:
- 1/2 cup nonfat plain yogurt
- 1/4 cup orange juice concentrate or juice from 2 oranges
- 2 tablespoons poppyseeds
- 1 tablespoon honey (optional)
- salt and pepper to taste
For the salad:
- 12 cups spinach leaves, washed
- 24 strawberries, halved
- Make the dressing: In a small bowl, whisk together yogurt, orange juice, poppyseeds, and honey. Season with salt and pepper. Set aside.
- Prepare the salad: Place spinach leaves in a bowl. Top with strawberries.
- Toss or drizzle with 12 tablespoons dressing before serving.
